Let’s Be Guilt-Free and Keep On Eating!

Who said that eating healthy food has to be boring and unappetising? Celebrity Chef Daniel Green, an award-winning author and healthy-eating expert, proves them wrong. Food is meant to be enjoyed and should not be something to feel guilty about.

Celebrity Chef Daniel Green and his “Wellness Menu” at at Mocha & Muffins His recent visit to Bangkok put him in the spotlight again, as this time, after 22 years, he teams with Anantara Riverside Bangkok Resort, introducing his “Wellness Menu” creations at Mocha & Muffins.

The menu focuses on low-carb and low-saturated-fat diets, yet offers nutritious and delicious meals.

But can we survive the daily “hunger game” with “a low-carb meal”? Chef Daniel answered Bangkok Foodies, “We have a calorie count for each meal, and each portion is about 350-450 calories. We make sure that each portion has the right proportions.”

The star of his menu has to be the New Zealand Cod Miso (480 Cal.). The cod is fresh, sweet, and perfectly cooked, served on top of avocado puree with a seared miso bed, sprinkled with edamame beans.

This dish is a meal that can be enjoyed while still leaving room for other dishes to join the tummy party. It has high and lean protein from cod,  and good fat from avocado. Truly a plate licking meal. I was the last one to take my first bite after my friends, as I was busy taking photos, but then I realised that I was the first one to finish the dish.

Another ingredient worth mentioning is cauliflower, which is featured in both appetisers and main courses.

It provides a subtle earthy flavour, is a great source of fibre, and can be combined with almost anything, such as a light salad dish or paired with any kind of protein. A vegetarian dish of “Roasted Cauliflower, topped with cashew butter, served with truffle bean puree and pine nuts” for only 460 calories.

I would say the “Wellness Menu” is really for everyone and not just for a specific group. It is gentle on the tummy and pocket-friendly. So why not give it a try?
