You’re either in tune with Chef Riley’s journey or you’re left shrouded in mystery. Either way, I am yet to meet a person that does not like or respect what Head Chef Riley Sanders is doing at Canvas restaurant in Thonglor.
After a long hiatus and some sad looking restaurant outdoor plants, Canvas Michelin returns,bright-eyed and bushy-tailed again, with a menu which comes from a lot of time for reflection. Like the name suggests, Canvas is a blank slate to which one can paint and Chef Riley has been doing it himself during the restriction period and you can see for yourself here.
Not dissimilar to his previous menu which saw technicolour splotches and brushstrokes on plates, Chef Riley has further built on his artists expression with even more explosive design and colour. These colours may be felt in the multiple layering of local ingredients, some to which are ever used nowadays or Thai cuisine or Riley has found a technique which has not been thought of or applied yet.
Without giving away which ingredients and details on taste because, the menu as the last experience, the journey feels a lot smoother, although the plate may say something else, there is still composure among the chaos and Riley’s genius layering of flavours remains fairly consistent throughout but there is certainly a wiser and more confident artists behind this new culinary exhibition.
Do we suggest you go? There’s no abstract message here, any trip to explore Riley’s menus at Canvas should be on everyone Bangkokians culinary wish list.
