Mia Restaurant Bangkok, are back on the scene with some significance, they no longer serve a la carte but only a tasting menu, aptly named “Taste of MIA”. Chef Pongcharn Russell and Chef Michelle Goh partners in the kitchen and at home have come back strong. It is, of all tasting menus versus those preceding it (in our opinion) the best of MIA’s thus far.
There’s something to be said of how COVID-19 has affected businesses in Bangkok that we noticed and that is it’s humbling effect. MIA Restaurant did a few tweaking of their room decor which was once elaborate and “showy” in it’s approach to something suiting simplicity and grace.
The “Taste of MIA” menu still takes the refined restaurant approach of incorporating high end imported ingredients such as Fresh Uni, Black Truffle, Hokkaido Scallops and Caviar but the execution feels a lot smoother and less fussy, although we did have a few ‘internal scream’ moments when the dry ice and Wasabi “snow” came out, but all-in-all Chef Pongcharn Russell and Chef Michelle Goh have done a stellar job at closing-in on achieving, the milestone, “personality of the chefs” in their cuisine at MIA.
