Would you like some trout with your trout? The team and Thammachart Seafood and Norwegian Seafood Council (NSC) got together to create a classic and innovative menu which exclusively features Fjord Trout in every single dish!

The ‘Fjord Trout, the Remarkable Creation from the Norwegian Fjords’ menu was developed by Chef Max – Nuntawat Chanyalikit, the winner of MasterChef Thailand Season 3 at 80’below, Thammachart Seafood’s premium seafood restaurant counter at the Gourmet Market

Swimming against cold water from melting glaciers and fresh water from mountains, Fjord Trout is a fresh Norwegian seafood that gives a tender, crunchy, bouncy, and juicy texture, and delicious, sweet, and delicate taste.

We were pleasantly surprised at the versatility of this fish, with much thanks to the creativity of Chef Max who took us through Fjord Trout; snacks, starters, mains and even into dessert!

the power couple behind the powerful Thammachart Seafood brand are Yeeran and Julian G. Davies, who developed the business from the ground up, since 2007, were present at the luncheon to introduce the Fjord Trout initiative to the esteemed VIP and Media.

The course consisted of Pan-seared Dry-aged Fjord Trout with Thai-styled oyster risotto and a Smoked Norwegian Fjord Trout on quinoa salad and coriander cream cheese tartelette which was zesty, creamy, light and refreshing.

Among one of our favorites at the 80’below session was the tasty ‘Deep-fried Norwegian Salmon Filet, gor-lar sauce and Thai-styled salsa jelly’ but the original dessert of Norwegian Fjord Trout cake with sweet trout coconut spread and coconut ice-cream, really had tongues wagging.

The Beetroot-cured Norwegian Salmon with Thai-styled hot and sour turmeric soup was a nice little nod to Thai-Norwegian fusion, and probably less likable but fascinating nonetheless was the Dry-aged Norwegian Fjord Trout yuzu granita. Points for trying!

Something which came out of this fulfilling lunch that apart form enjoying Fjord Trout raw or lightly cooked, Fjord Trout can be created for both savory and sweet dishes, making this particular course a distinctive Nordic-Thai inspired culinary experience.
